Ask HN: Best email client for Mac to sync with Gmail

I'm interested in having an offline backup of my Gmail, ideally in a standardized format. I was about to use Outlook but it wants to "Sync Gmail with the Microsoft Cloud". Is Thunderbird still a viable option?
