Bird collecting evolved into bird-watching

I saw the Stewart Brand documentary recently and there is a scene where he pulls out an entire rack of (frozen? it looked like) carrier pigeons. I wonder if they were "collected" in this sense.

Interesting - what is the root cause? Habitat destruction? Insecticides? Disease? Pollutants? Noise? Predators? It doesn't seem like birds are regularly being hunted to extinction.
