I used to recommend Linux Mint (and have converted some friends with it!) But no longer do so, as their attitude to security is a bit lax.
One issue I often lament is that their main desktop environment, Cinnamon, is still on X.org only. This would be fine if they sorted the processes being able to see each others windows problem, but they haven't AFAIK.
