i never had a piano growing up, neither any musical instruments.

i've long been "impressed" by piano in particular because i love to type and write for hours at end but never tried it.

is it possible for me to "learn" this at an advanced age as opposed to only learning it when you are a kid?

Yes - and it is maths, (tonal) colors, timing and spatial awareness. I started as a child, moving from an inexpensive (reed) chord organ. Don't exclude other keyboard-based instruments from your travels, either - they all have different response characteristics and timbre.
