We use one of, or more usually a combination of, the following for logs and monitoring: Cloudwatch, Splunk, OpenTelemetery, Honeycomb, and I'm sure others. I only have a little experience with OpenTelemetry paired with Honeycomb. I really like it since it allows in depth tracing with performance metric tools.
